Can You Freeze Fresh Collard Greens Without Blanching

If you use a freezer bag remove as much air as possible from the bag by pressing down on it while sealing.
After trimming off excess stems and any leaf damage place desired leaves into one side of sink. Let the leaves sit in the water for about 3 to 5 minutes to allow all of the dirt and grit to sink to the bottom. Fill both sides with clean cold water. If you want your green leaves to be intact or you prefer them cut into bigger pieces you need to blanch the greens prior to freezing.
Freeze the collard greens immediately. The recommended process to freeze greens is to blanch them first. These include kale micro greens collard greens spinach cabbage beet greens and watercress. Once the leaves are cool grab a handful squeeze out the water and place the leaves in a quart sized freezer bag.
Provided you follow our instructions correctly you can freeze leafy greens for up to 9 months without blanching. Most greens need to be blanched for 2 minutes collard greens for 3. Blanching will stop the enzyme actions and also destroy certain enzymes that make leafy greens bitter. However it is not required.

Run cool water over the leaves to cool them quickly. To freeze leafy greens without blanching them chop them into small pieces and put them in a sealed plastic bag. Agitate leaves in water with your hands. With this method your leaves will freeze in one quart sized lump.
3 drain off excess moisture package in airtight containers or freezer bags and freeze. Wash the freshly harvested greens and blanch them in boiling water. Label the bag with the current date so you can keep track of how old the greens are. Do collards freeze well.

Now put them into a freezer bag or container. Freeze the collard greens and use them within 10 12 months. If you didn t blanch your greens try to use them sooner rather than later.
