I use regular olive oil to season my cast iron pans but you have to be careful with it since too thick a layer of olive oil can result in a sticky surface instead of a hard glossy one. The difference is the oil s smoke point or the temperature at which the oil starts to give off smoke. While it s great for salad dressings olive oil isn t actually so great for seasoning cast iron and that s down to the fact that it has a low smoke point. Olive oils are very healthy and best for cooking purposes only.
If you choose olive oil to season your cast iron pan with you simply have to do so at lower temperatures for longer intervals of time. There are milk solids and water in butter that will mess you up. That said pretty much any cooking oil can be used to season frying pans. You can generally use whatever oil you prefer as long as the cooking temperature is below the smoke point of the oil.
When cooking in cast iron you should add a little oil to the pan before adding your food. These are all benefits to using olive oil to season your cast iron. However the problem arises when you start using it to cook your food. Why olive oil may not be the best oil for seasoning cast iron skillets olive oil is generally known for its low smoke point which is somewhere between 325 375 degrees f.
