I know that sounds confusing even to me.
Both types of milk are different and their uses are also different. Just use the same about of half and half as the recipe calls for evaporated milk. Because of its creamy consistency half and half can work as a replacement for evaporated milk in a pinch. Because condensed milk contains sugar it can not be substituted directly for evaporated milk.
Evaporated milk on the other hand skips the sugar and just heats milk until 60 percent of the water evaporates. It is made by heating regular milk to remove about 60 of the water creating a concentrated and slightly caramelized. Yes you can substitute condensed milk for evaporated milk. Not if the recipe you re making does not have sugar in about the same proportion as condensed milk has relative to evaporated.
Well that is not the case. Many people get confused between evaporated milk and condensed milk. Evaporated milk is boiled milk with no water and no sugar whereas the condensed milk is sweet because it has sugar. This process gives the evaporated milk a deeper color and fuller flavor.

We recommend brown sugar to get a more caramely flavor. A regular can of condensed milk equals one cup of evaporated milk with one cup of granulated sugar. Sweetened condensed milk is a mixture of whole milk and about 40 to 45 percent sugar which is heated until about 60 percent of the water evaporates. Can you substitute evaporated milk with sweetened condensed milk.
However the other way around you can substitute evaporated milk for sweetened condensed milk and add sugar. They think both are the same and can be used as substitutes. But a cup of condensed milk would be about 60 40 sugar to evaporated milk. Not to be confused with sweetened condensed milk evaporated milk is another product with a relatively long shelf life.
For better results use whole milk and reduce it down to a cup. Evaporated milk is a high protein creamy milk product used in many recipes.
